I'm trying to use the VUM powercli commandlets to write a script to check for patches and update my ESXi hosts but I am running in to trouble trying to use them. Does nayone know how to use the Scan-Inventory commandlet? Let say I have a host server01 and I want to see if it has updates... not sure how the syntax works to use this command...

Have you though about using VUM (Update Manager) to check for patches?
It gives you a central view of which hosts are compliant and if not - what patches are missing.
